LYON RESTAURANTS 

Lyonnaise restaurants, in the most general sense, serve perfect, or perfected, French classics. Conversely, if French classics are to be eaten anywhere, Lyon is the likely place. These are three contemporary classics to consider. None is expensive, all are excellent. There are the extraordinary restaurants by Paul Bocuse and Les Frères Troisgros, but the bouchon, the typical Lyonnaise bistro, is superb, accessible, and not expensive, by comparison. M. Bocuse has several excellent bouchons of its own, named Le Nord, Le Sud, and L’Est.
